Gingerbread Chocolate Truffles

I love chocolate. Like really really love it. I also love everything gingerbread spiced, so I thought combining the two would be a great idea (it was). Hello Christmas candy!

These healthy-ish chocolate truffles are vegan, gluten free, nut free and dairy free which means that they can be enjoyed by almost anyone. They are also so incredibly easy to make with only a few ingredients.

Make sure to blend the ingredients as thoroughly as possible, the smoother the better. A food processor with an S-blade is perfect for this. I use a store-bought gingerbread spice mix, but you could easily make your own mix of ground cinnamon, ginger, cloves and cardamom (in the proportions you like).

Enjoy these with a big cup of tea (or two), warm socks and maybe a good book. So cozy!

  1. Yummy. I think since Christmas is just here, I will give them a try this weekend. If I manage to make them perfectly, I will be definitely making them for everyone.
