I'm slightly obsessed with watermelon and could eat it every single day during summer (if I could afford it!). To me, there is noting better than lots and lots of juicy watermelon on a hot summer's day. It is here accompanied by fantastically sweet strawberries plus lime and passion fruit. The lime juice and passion fruit adds some tartness which somehow brings out the flavour of the watermelon and strawberries even more.
This fruit salad doesn't just taste amazing though. Watermelon contains lots of the antioxidant lycopene which protects the skin from sun damage. Strawberries and lime are rich in vitamin C which helps to eliminate free radicals produced by sun exposure. This means that these fruits almost act like a sunscreen from the inside. Many years ago, before I was into healthy eating, my skin was terribly sun sensitive. I went completely red and also got sun eczema after only a little while spent in the sunshine, even though I used spf 50. Nowadays, when I eat loads of fruits and veggies in every colour of rainbow every day, I can spend practically entire days in the sun without getting burnt and I can also use a much lower spf. Quite amazing, huh?
Summer Fruit Salad
Slice watermelon into small cubes and strawberries in half. Put in a bowl and top with squeezed lime and passion fruit. Enjoy!
