Chocolate Cookie Dough Banana Ice Cream

Healthy ice cream? Yes, with some frozen bananas it is possible! When you blend frozen bananas something magical happens and they turn into the smoothest ice cream ever. I like to flavour my ice cream with some raw cacao powder and vanilla to make a simple chocolate ice cream. When I want something really indulgent, though, I love to add crumbled raw brownies or chocolate energy balls to make cookie dough ice cream. Equally delicious to cool off in summer or to sooth a sore throat in winter.

I love love love bananas and have them (yes, in plural) every single day. I think it's such a shame that so many (low-carb) people nowadays believe that bananas are unhealthy and should be avoided. To me, bananas are the perfect energy booster in the morning, in the afternoon or before a workout. Fruit is not the same as eating candy, as the sugar in fruit comes in a package with lots of fibre, vitamins and minerals. Never be afraid to enjoy your fruit!

On another note, I'm so ready for spring right now. I can't wait for sunshine and longer and warmer days. But for now it's tea inside while the snow is falling outside my window, which actually is pretty cozy and not that bad after all.


Chocolate Cookie Dough Banana Ice Cream

Serves 1

 

Ice Cream
2 bananas, frozen (peeled and chopped first)
1 tbsp raw cacao powder
1 fresh date, pitted
Pinch of real vanilla powder
1/2-1 tbsp plant milk

Blend all ingredient in a food processor until a the bananas turn into a smooth ice cream.

Cookie Dough
Crumbled Chocolate Energy Balls or home-made raw brownies
Add to the ice cream and stir together. Enjoy!
