Raw Pesto Pasta

 
Mmm... who doesn't like pasta with pesto? This is not your regular pesto pasta though, since the "pasta" is made from raw zucchini and the pesto is vegan and filled with healthy ingredients. A fun way to have some more veggies on your plate! This side dish is even better in summer when you don't want a hot plate of food.

A spiralizer is a great kitchen equipment to invest in. Apart from zucchini, I also like to spiralize carrots and cucumber and toss the "noodles" into salads. You could also make sweet potato noodles and even fruit noodles! Great, isn't it?

Raw Pesto Pasta

Serves 4


Pesto
1 pot of fresh basil
1/2 avocado
2 big fistfulls of fresh spinach
Juice of 1 small lemon
1 clove of garlic
1/4 cup raw walnuts
1 tbsp olive oil or flaxseed oil
1/2 tsp black pepper
1/2 tsp herbal salt

Mix everything in a food processor or with a hand held bleder until the pesto is super smooth.

Pasta
4 zucchini

Make zucchini "pasta" with a spiralizer or veggie twister. You could also make fettuccine with a regular potato peeler instead.
