Peanut Butter Noodle Bowl
1 portion rice noodles, I used whole grain black rice noodles
1 big portion vegetables of your choice, I used kale and carrot
1 tbsp creamy peanut butter
1 tsp tamari
2 tbsp non-diary milk
1 tsp maple syrup or coconut syrup
1. Boil your noodles according to the instructions on the package.
2. Chop your veggies and saute them in a little coconut oil until they begin to turn soft.
3. Blend together the peanut butter, tamari, milk and syrup with a hand held blender. Add the peanut sauce to the veggies and stir.
4. Add the noodles. Stir again and serve!
