Recipes like these convince me again and again how easy it is to create delicious and satisfying dishes and treats using entirely natural, plant-based and healthy ingredients. Dates are one of my absolute favourite foods, and apart from making these balls sweet they also make them stick together. They also contain some minerals and fibre. The walnuts and the nut butter add some healthy fats, and the oats are full of fibre, iron, zink and magnesium.
Bring these chocolate balls to work or school for an afternoon snack, or maybe eat them as a healthy replacement for cookies and candy.
Chocolate Energy Balls3/4 cup rolled oats
1/4 cup walnuts
1 cup fresh dates (pitted)
1/4 cup raw cacao powder
1 tbsp peanut butter, almond butter or hazelnut butter
1 tsp melted coconut oil
Blend all ingredients in a food processor until a sticky dough is formed. Shape into balls which you then roll in shopped nuts, hemp seeds, sesame seeds, grated coconut, raw cacao powder, liquorice powder, chopped dried goji berries or anything else you have at home. Keep in the freezer.
