Chocolate Chia Pudding

Healthy chocolate pudding? Yes, please! This chocolate pudding, made from chia seeds, can be eaten as a dessert, as a snack or maybe even for breakfast. When I want something luxurious I like to serve it in a beautiful glass and top it with colourful berries. Small things like these truly make a difference.

Chia seeds absorb incredible amounts of liquid, which creates a gelatinous pudding consistency. These tiny seeds contain lots of omega 3 fatty acids, protein, fibre and minerals and therefore make a healthy addition to any diet. I eat small amounts of chia seeds almost every day to make my breakfasts more filling and to give my body essential fatty acids. Other plant-based sources of omega 3 are walnuts, hemp seeds and flaxseed oil, all of which I try to incorporate into my diet often. But I must say that chocolate pudding is the most delicious choice!


Chocolate Chia Pudding

Serves 1


2 tbsp chia seeds
1 cup non-dairy milk
1/5 tsp real vanilla powder/vanilla seeds
1 tbsp raw cacao powder
1 tsp maple syrup or coconut syrup

Place all the ingredients in a glass jar. Put the lid on and give it a good shake. Leave for a couple of minutes and then shake the jar again. Then place the jar in the fridge and let the pudding sit for a few hours or over night. Pour the pudding into a bowl or a beautiful glass and top with berries or chopped fruits.
