Blueberry Pudding

How I love a dessert so healthy you can eat it as a snack or breakfast too! Eat this creamy blueberry pudding as it is, or top it with some coconut chips or chopped nuts. Blueberries contains tons of antioxidants and may, among other things, contribute to good eye health. I enjoy these super berries almost every day for their great taste and amazing health benefits. For the most part of the year I buy frozen blueberries, because the fresh ones available here are very pricey and usually of a not very good quality. In the late summer though, I love to ramble in the deep Swedish forests around me and pick lots of wild blueberries. Their taste and juiciness can just never be matched with any store-bought varieties.

In this dessert, the frozen blueberries are combined with avocado for creaminess, banana and dates for sweetness and a little squeeze of lemon for some freshness. Simple but oh so delicious!


Blueberry Pudding
Serves 2

1 ripe avocado
1 ripe banana
1 cup frozen blueberries
1 1/2 tbsp lemon juice
2 fresh dates, pitted

Blend all the ingredients in a food processor until the pudding is completely smooth and creamy.
